Alaska has a strong Russian tradition. This is particularly true of Sitka, in southeast Alaska, which served as the capital of Russian America for many years, and was the site of the transfer of Alaska to the United States in 1867. After the transfer many Russian families elected to remain in Sitka, thus perpetuating Russian names, customs--and foods.
This cookbook is a small effort to save some of the better known recipes that were used in those Russian households.
The recipes in this book have been selected from hundreds in a Russian cookbook called "A Present for Young Housewives", by E. Molokhovetz/ Their choice has been dictated by a desire to introduce to American housewives some of the famous and characteristic dishes that made cooking a fine art in Sitka, as well as in old Russia.
